Paleo Cookie Dough Truffles

Super good, super easy and NO BAKE!  I recently brought them to a party and they were a big hit.  Not only are they paleo, they are also vegan!

Ingredients:

2 1/2 cups almond flour

2 Tbsp coconut flour

8 Tbsp (1 stick) Earth balance butter, softened/room temp.

1/3 cup maple syrup

1 Tbsp vanilla 

1/4 tsp sea salt

1 cup chocolate chips (Trader Joes semi-sweet are vegan)

plus more chocolate for dipping if you like.

In a medium bowl, combine butter, maple syrup and vanilla.  Mix together with a hand mixer (a fork will work if need be)

Once the butter mixture is smooth, mix in almond flour one cup at a time.  Then add the coconut flour one tbsp. at a time.  You may need to play around with the amount of coconut flour.  The batter should be firm enough to form into balls, but not so dry it falls apart.

Add the sea salt (very important) and chocolate chips and stir.

Line a baking sheet with parchment paper.  

Form dough into balls (about 1 Tbsp) and set them in the fridge for at least 30mins.

If you like, you can melt down the rest of your chocolate chips and dip the truffles or eat them plain.  Enjoy!!!
